We produce our guacamole with local avocados that are grown virtually organic.  We ripen them to perfection, then double vacuum and flash freeze them.  We keep them in ultra-low freezers that reach minus 60°C.  This allows our guacamole to stay just as fresh anytime of the year!  To thaw, just soak the package in tap water for 5 minutes!
